"Soup-er" Healthy!


After Muffin Mayhem, I decided to head back into the kitchen and give it another go...  Having extra vegetables in my fridge that needed to be used soon, I dusted off a cookbook that I haven't used for a while, 1,001 Low-Fat Vegetarian Recipes.  Opening to the index and searching for a recipe to use the remaining zucchini from Uncle Len's garden, I came up with Dilled Zucchini and Broccoli Soup.  Easy, healthy and delicious.
